I made this about a week ago and ended up finishing it off myself. Lol. I had my elves (Kar and Shan) do most of the work so it was pretty easy for me. Haha.
For the cake batter:
250g pitted dates
1 tsp bicarbonate of soda
1 1/2 cups boiling water
125g butter
1 cup brown sugar
1 tsp vanilla
2 eggs
1 3/4 cups self-raising flour
Caramel sauce:
1 cup brown sugar
300ml thickened cream
1 tsp vanilla
60g butter
-Slice the dates into chunks, add the bicarb and boiling water and let sit while you prepare the rest of the ingredients. It should bubble up.
-Cream butter and sugar. Add vanilla and eggs, one at a time.
-Fold the flour alternating with dates into the mixture. It will be runny and i was worried because it was a bit watery but it turned out fine.
-Spoon into muffin pans or into cake pan which has been lined with baking paper or oiled and then dusted with flour. You know the drill.
-Bake at 180*C for about 40-45 mins until cooked through. Cooking times will be less for muffin pan - about 12-15 mins.
-For the caramel sauce, just place all the ingredients in a small saucepan, let it get to a boil and then simmer on moderate to low heat for 2 mins.
Cut a slice of cake and let it sit in a pool of caramel sauce. Itadakimasu. This is a devilishly unhealthy but a delicious treat especially if you love dates like i do. And add 1 tsp of cinnamon powder to the batter if its available to give it a bit of spice. Recipe is sourced from www.taste.com.au.

question: Did u use an electric mixer to cream the butter etc? cause i dont have one, and was wondering if kai wooden sppon dapat? or other diff options.. or tpaksa invest in an electronic hand mixer cam yang d brunei atu/lol
Buleh kali tu eh..i used an electric mixer but i'm sure you can use a wooden spoon, leave the butter at room temp so its easier to cream..
